One other breadmaking company is When Pigs Fly, also in York (they're tucked in behind Fazio's Restaurant).  I've called them to confirm the origins of their primary ingredients, will report back asap.  Their cool website (take the bakery tour!) does not state 'where' as much as it does 'what' for ingredients, but it does state that their ingredients are "all organic."
